Monday Ramblings...

So today has been an unusual Monday for me....I usually am trying to recover from the weekend mess in my house but surprisingly it wasn't too bad today. I was up late last night cleaning my kitchen so it would free me up today to do some baking.
I also found out my sister is expecting her fourth child this morning so that started the day off cheerfully :)

I did a ton of baking today as well. I made 5 loaves of bread! Four of them were by hand and very easy to make! I used this recipe for the white bread (Can't get my hubby away from it) and I put a whole grain one in the bread maker. I have been disappointed lately with my bread maker...all of my bread has been deflated upon coming out...and that's even with using bread flour. The loaf today was no exception..I think the rising cycle is too long or something..anywhoo...I think I like making bread by hand (this was my first time really..BTW)and will be trying to keep my baking day on Mondays...it frees my Saturdays up for hopefully something else fun ;)

Tommorow we are meeting with Gina and going to take our kids to one of the free summer movies and hopefully getting some In and Out afterwards :) I'll try to get some pics of us and post them then.

My bread always comes out deflated, too, no matter which recipe I use! It must be the machine. Which one do you have?

I have a Hitachi bread machine...it was given to me about a year ago.
I am going to prolly just use it for the dough cycle for my wheat bread till I figure out what is going wrong. But as for the white bread (makes 4 loaves) it's the best recipe I have made thus far!
It may be difficult for you tho (britewingz) due to your back and having to knead it for 10 mins straight...you could get the kiddos to beat the dough up for you till your back gets taken care of :D

Yeah, the kneading is too much for me. I'm going to try the express setting next, to see if that makes any difference. It's not horribly deflated, but it still isn't right.

My machine is an Oster, so maybe it is something in the settings or the recipe, though I've tried about 6 variations so far and they all come out exactly the same:-P
